There are exactly 40 insights in PoF, however you can only reach 37 without the Griffon (although it is possible to get all 40 using the other mounts in combination with Gliding), you get 1 point for unlocking each mount so up to 5, all story missions except "Sparking the Flame" award a point on first completion which gives a total of 12 and
Also as someone else said remember that you're not actually paying 250g for the griffon - you're paying 10 lots of 25g. It does make a difference because it means you can spread it out, or if you find it hard to save up you only need to get 25g, then spend it, then get another 25g.
The the hint for this item in the Open Skies Aka Griffon Collectiins suggests you have to redo it (if youve already done it) in order to receive the griffon item. But thats not the case if you did this mastery point prior to starting the 5 Open Skies aka Griffon Collections, you won't have to collect her equipment again, just talk to her.

Climb the eastern cobra snake head pillar using a springer by jumping on the tail at the rear, and then onto the head. Mount griffon, activate Bond of Vigor, then fly towards the Mastery Point.
